Agave syrup is a sweetener derived from the Mexican agave plant. Due to its almost neutral flavor is excellent substitute for sugar and honey. Sweetening component is glucose, fructose, inulin, and in particular, thanks to which has a low glycemic index is used in the twenty-second half amount than honey (the doubly sweeter).

Indians agave syrup and high praise from its pulp used to sweeten drinks and foods. Agave Syrup is obtained from the Weber blue agave, because this type contains the highest amount of carbohydrates. Agave is harvested at the age of 7-10 years. Next, the pulp obtained juice processed at low temperatures below 45°C.

In stores you can find two basic types of agave: light and dark. Lighter passes finer filtration, so it has a more neutral taste suitable for many kitchen modifications. Darker syrups are less filtered and solid particles preserved in syrup give it a delicious flavor sometimes compared to maple syrup. It is, for example syrup, which can be purchased from Iswari. The flavor of the syrup, however, is very delicate and much weaker than known e.g. in honey.

Agave comprises on the other hand, high amounts of fructose, recommended because of its moderate consumption (max. 15 g / day in an adult human). Although fructose does not increase the GI, it has a high intake negative impact on the formation of triglycerides (or blood sugar) and insulin resistance. It is ideal as a slight sweetening coffee, tea and cold drinks (easily dissolves).

Agave syrup from Iswari belongs on the market among the quality because it contains a relatively low ratio of fructose (max. 65%) compared to lower priced products (up to 90% fructose). It was also processed at lower temperatures and thus is less refined than the "non-raw" syrups.
