Shiitake (Lentinula edodes) is called the queen of mushrooms or the elixir of life for its high content of amino acids, vitamins and minerals.
The shiitake mushroom has been used in Asia for about three thousand years. This mushroom contains an extraordinarily diverse complex of medicinal substances. In addition to the B vitamins - which are essential for life but are hardly found in plants - shiitake mushrooms contain ergosterol (provitamin D) and minerals such as potassium, calcium and phosphorus, as well as iron and zinc. Amino acids are also present in shiitake, 7 out of the 8 essential ones. There are also nucleotides, amino acids, peptides and organic acids.
